this book is way over priced and not even close to what I was told it would be. Its JUNK
Be prepared for a bit of complexity

This is a wonderful cookbook and REALLY does tell you how to make the CPK pizzas true to ones we enjoy at CPK.
You should be aware of a few things:
1) Buy a Pizza Stone, it makes the pizzas cook better
2) Be prepared for a bit of work. Making the dough the way they say takes longer than a day, since you have to let the dough sit, rise, punch it down, let it rise and so on.
3) The sauces and ingredients are accurate, but, wow, some of them arent so easy to make. I love the Tandoori Chicken Pizza, but between making that and my wifes Garlic Shrimp Pizza, it took me 4 hours!

Is the payoff worth the effort? Well, seeing that a Pizza at CPK costs, what, around 12 bucks, its cheaper to go there and get it. However, if you truly want to know how to make Pizzas the CPK way, this is your book!
Looks Cute, but Pizza Dough is way too soft and soggy...

The California Pizza Kitchen Cookbook book looks cute and promising enough, but the bread flour recommended in the book for pizza dough does not have high enough gluten. Without using high-gluten flour (OR making it with vital wheat gluten), resulting crust is too soft and soggy, not crispy at all. Some people like it like this, but cant make the specified 9" pizzas without the dough coming apart and then having to patch it its just not elastic enough. The dough is actually not a dough, but more like a very sticky batter which sticks to the bottom of the KitchenAid stand mixer and therefore doesnt get much mixing because of this and because theres so little of it. Very sticky to handle and, again, theres just not enough batter-dough made from the recipe to make what they claim, so be ready to do some recipe calculations.

The instructions for making the dough are poorly written, resulting in vagueness, misunderstandings, and lots of rereading to try to figure out what they want you to do.

Ill stick with THE ULTIMATE PIZZA MANUAL, which gives me real incredible pizza.

I was a bit dissapppointed. I purchased this cook book thinking it was a cook book that featured all of the food found in California Pizza Kitchen Restaurants. Well needless to say my favorite Salad is not featured in this book. I always enjoy a Field Green Salad with Gorgonzola cheese this salad is not listed in the book...Putting together the salad is a breeze...I just wish I knew the ingredients to the dressing that makes it all worth while!

If you are only interested in the actual Pizza & Pasta recipes then this is still a great buy!!!

The two cookbooks are wonderful additions to any collection. The recipes are easy to follow and its like bringing California Pizza Kitchen into your own home, hands down. The only down side is these books dont have any new or newer reccipes. The salad dressings are the same and the pizza recipes are the same, but the other items that CPK offers now, these 2 cookbooks are very limited in the menu they have now and have had for the last ten years. We love what they do offer in the cookbooks and I hope they come out with a newer updated version.
